Literally the oldest known formal recipe manuscript from the 14th century was English – manuscripts with recipes of what we’d call Curry today – meats cooked in spicy gravy – before the Raj, before any evidence of such sophisticated dishes even existing in India – which has had written languages for thousands of years – where are their cookbooks? What is the Hindi name for spicy sauce that’s part of a “wet” dish? That’s right – gravy. These 14th century manuscripts were collected and formally printed four hundred years later in an 18th century cookbook called “The Forme of Cury”. Yeah, no seasoning before Windrush eh?
